Pho is a Vietnamese noodle soup built on a long simmered beef or chicken bone broth seasoned with charred ginger and onion and whole spices such as star anise and cassia, poured over flat rice noodles and sliced meat, and finished at the table with fresh herbs, bean sprouts, chili and lime. Most food historians place its emergence in the Nam Dinh and Hanoi area of northern Vietnam in the early twentieth century, though the exact year and the dish's deeper lineage are genuinely debated.

Origin Period, From (Year)
A minority reading, associated with Gustave Hue in 1937, derives pho and its name from the French pot au feu tradition introduced under colonization. The stronger documented reading, following Hue's own later view alongside Eugene Gouin and Le Ngoc Tru, and repeated by contemporary food historian Andrea Nguyen, traces the word and dish to the Cantonese nguu nhuc phan, beef noodles, tied to an influx of Chinese laborers around 1908 to 1909 whom Vietnamese and Chinese cooks served first with water buffalo soup and then cheap beef scraps. Linguist Victor Mair concludes the origins and etymology of pho are highly complex and hotly contested.
