Yum cha, literally drink tea in Cantonese, is the custom of gathering at a teahouse for a leisurely brunch of tea accompanied by dim sum, a broad assortment of small savory and sweet dishes, traditionally steamed or fried and, in the classic twentieth-century format, wheeled between tables on carts so diners can select dishes by sight. Legendary accounts trace tea-accompanying snacks to Silk Road roadside teahouses as far back as the Tang or Song dynasties, but this is not corroborated by the more rigorous sources found; Britannica instead dates the custom's origin to the Qing dynasty, with distinct Guangzhou teahouses serving tea alongside simple dishes well documented by the eighteenth and nineteenth centuries. The elaborately staged modern teahouse format, including trolley service, developed in Guangzhou in the 1920s and 1930s and spread afterward to Hong Kong. It remains strongly associated with weekend family gatherings and unhurried business or social meetings, with the pairing of tea and rich, oily dim sum dishes traditionally explained as aiding digestion.
