A 2004 peer reviewed study led by biomolecular archaeologist Patrick McGovern, identifying chemical residues, tartaric acid, beeswax compounds and phytosterol ferulate esters, consistent with a mixed fermented beverage of rice, honey and fruit, in pottery jars from the early Neolithic site of Jiahu, Henan province, China, dated to roughly 7000 BCE.
