British Cuisine

British cuisine reflects the agricultural produce and practices of the British Isles, shaped by centuries of trade, colonization and immigration. Its foundations are savory pies, roasted meats served as a Sunday roast, and simply prepared vegetables and dairy. Puddings, both sweet and savory, and bread-based dishes are longstanding staples. From the eighteenth century onward the British Empire's trade routes brought tea, sugar and spices into everyday cooking, and curry, introduced through British contact with South Asia, became naturalized as a national favorite; fish and chips, popularized in the nineteenth century, became an emblem of working class urban food culture. Regional identities sit inside the wider British tradition alongside a modern, ethnically diverse restaurant culture built on Indian, Chinese and other immigrant cuisines.
