Filipino cuisine rests on a Malay and Austronesian base, built around rice, tropical fruit, coconut and seafood, layered over centuries with Chinese trading influence from around the eleventh century, more than three hundred years of Spanish colonial rule, and American influence following the Spanish American War. No single flavor dominates, and family and regional recipes for the same dish vary widely.

More than three hundred years of Spanish colonization introduced fiesta foods, wheat pastries and a name that came to be attached to the pre existing native vinegar cooking technique, adobo.
